Mangoes, so dreamy. Let them ripen until palpably soft then add them to smoothies, top your grilled fish, freeze them, or eat them fresh over the sink.

Recipe of the Week:

Colcannon

1 1/2 lbs potatoes
4 cups chopped kale
3 tbsp butter (or more if you're me)
1/4 cup sour cream or 1/2 cup cream or milk
2 tbsp prepared horseradish
salt to taste

 

-Boil your potatoes until they are easily punctured with a fork and then drain
- Cook your greens in a tablespoon of butter until wilted
- Add the sour cream, horseradish, salt and the rest of your butter to the potatoes and mash until smooth then add your cooked greens and mix well
- Season to taste
