Recipe of the Week
Roasted Garbanzo Beans

1 cup dried garbanzo beans
2 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 tsp paprika
1 tsp cumin
Juice of half a lemon

Soak dried garbanzo beans overnight in a large bowl of water, until they expand to about double their size.
Drain and add beans to a pot of lightly salted water and bring to a bowl.
Simmer for about 1 hour or until soft.
Drain the water and rinse the beans before cooking.
Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.
Place the garbanzo beans in a bowl and combine with olive oil, salt, and pepper, paprika, cumin and any other desired seasonings.
Spread in a single layer on a baking sheet.
Place into the oven and roast for 30 minutes, shaking the pan every 10-15 minutes.
When the beans are golden brown and crispy, remove from the oven and toss with lemon juice.
Serve with rice and your favorite veggies!
