Roasted Summer Squash
These sweet little Patty Pan summer squash from Mustard Seed Farms are delicious grilled on the barbecue or roasted in the oven. Simple and healthy!
2 Patty Pan Squash, sliced 1/2 inch thick
2 cloves garlic, minced
2 Tbsp olive oil
2 Tbsp fresh rosemary, finely chopped
Combine olive oil, minced garlic, rosemary and olive oil in a bowl and stir to combine. Slice the squash to create 1/2" disks. Brush each side of the patty pan squash with the garlic/olive oil mixture. Heat the grill to 350 degrees or preheat oven.Grill each side for 3-5 minutes, or roast in the oven for about 30 minutes or until tender. Serve and enjoy!
