Recipe of the Week:

Corned Beef and Cabbage

Happy St. Patrick's Day! Let's celebrate with some corned beef and cabbage and a Guinness.


2-3 lbs. beef brisket with corned beef spice packet
1/2 cabbage cut into wedges
3 carrots cut into large chunks
1.5 lbs potatoes halved or cut into large cubes


- Add brisket and spice packet to a pot and cover with about an inch of water
- Boil until fork tender about 2 hours
- Remove brisket and add cabbage, potatoes, and carrots to the cooking liquid
- Boil veggies until the potatoes are tender about 20-30 minutes
- When finished add the veggies to a serving bowl with a little bit of the cooking liquid and enjoy with slices of brisket and some spicy mustard or horseradish
