Grano Bread
We are starting Grano bread delivery this week! It's not too late to add a baguette, sourdough, olive bread, or spelt loaf to your order. Grano Bakery & Market is an Oregon City bakery specializing in artisanal bread made with locally sourced ingredients. Below is a recipe for making bruschetta using Grano baguette and farm fresh basil from your produce bin.

Tomato & Basil Bruschetta

1 Grano baguette, sliced 1 inch thick
1/2 cup fresh basil leaves, coarsely chopped
2 cups sliced cherry tomatoes
1 garlic clove, minced
2 Tbsp olive oil, plus an additional 1/4 cup for brushing
1 Tbsp balsamic vinegar
1 tsp salt
1/2 tsp pepper
1 1/2 cups shredded mozzarella cheese

Preheat your oven to 400 degrees.
Place sliced cherry tomatoes, basil, 2 Tbsp olive oil, balsamic vinegar, garlic, salt, and pepper in a bowl. Stir gently, set aside to marinate.
Place baguette slices on a large baking sheet.
Brush 1/4 cup olive oil over the baguette slices and top with shredded mozzarella cheese.
Bake for 5 to 10 minutes, or until cheese is melted and slightly browned.
Remove from oven and top with tomato and basil mixture. Serve and enjoy!
