Recipe of the Week
Sautéed Shiitake Mushrooms

We've got some organic shiitake mushrooms farm direct from Misty Mountain Mushrooms in Yamhill this week! These mushrooms are tasty sautéed with a little bit of garlic or mixed with your favorite veggies such as green beans, onion, or summer squash for a quick dinner!

3 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1 garlic clove, mined
2 tsp dried italian seasoning
2 medium summer squash, diced
8 oz shiitake mushrooms, sliced

- In a small bowl, whisk together olive oil, salt, pepper, minced garlic, and italian seasoning until well blended. Set aside.
- Cut up veggies and place in a large bowl.
- Add olive oil mixture to veggies in the large bowl; Toss well until all veggies are coated.
- Heat large non-stick skillet over medium-high heat.
- Add veggies and sauté 5-7 minutes, stirring often.
- Once veggies are tender, remove from heat. Serve warm!
