Cinco De Mayo Goodness

Rainbow chard is mild in flavor and is a very versatile green. Enjoy these vegetarian tacos!

Recipe of the Week:
 

Vegetarian Chard Tacos

 
Chard is a versatile vegetable. These tacos can be made with whatever toppings you desire!

Ingredients:
6 chard leaves
1 tsp avocado oil
1/2 yellow onion, minced
2 garlic cloves, minced
4 cremini mushrooms, diced
1 can black beans
1 can corn
1 small can green chilis
1 tsp chili powder
Salt and pepper to taste

Optional toppings:
minced cilantro
cherry tomatoes, halved
sour cream
sliced avocado

Method:
Wash chard leaves, cut off stem and pat to dry.
In a skillet, heat oil, Add the onion, garlic and mushrooms and heat until soft. Add chilis, beans, corn and chili powder and heat until ingredients are cooked through. Spoon filling into the chard leaves, trying not to overfill. Top with desired toppings!

Carrots - 1 bunch
Mint - 1 bunch**
Sugar Snap Peas - 1/2 lb
Fuji Apples - 3 ct.**
Kiwi - 4 ct.
Lemons - 1 ct.
