Recipe of the Week
Heirloom Tomato Salad

We hope everyone has been staying safe this week! Our recipe of the week was inspired by the beautiful heirloom tomatoes we have from Bella Organic Farm grown on Sauvie Island.

2 large heirloom tomatoes, cut into thick wedges
1 avocado, chopped
1 cucumber, thinly sliced
1/3 cup sliced red onion
1/4 cup fresh cilantro, chopped
2 Tbsp olive oil
2 Tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper

- Add the tomatoes, cucumbers, avocado, red onion, and cilantro to a large salad bowl.
- Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Gently toss to combine. Serve immediately.
