What's New? Fall Newsletter 2014
View this email in your browser
Hello to all!  I am very excited to share with you our FIRST newsletter for At Home With Wellness.  I have desired to have a newsletter for some time, as it will be a way for me to reach out, connect, and help to further inspire and educate.  I know that the road to ‘finding optimal digestive health and overall health’ can be a long and varied road for some.  I also know that the road to digestive wellness through using the GAPS protocol has been so very beautiful for so many.  The roads vary for everyone, as we are all biochemically individual with a varied history of stress, foods consumed, antibiotic usage, family lineage, and more.

It is my desire to help educate and inspire each of you, as you take this journey toward re-balancing our gut and finding your optimal wellness.  My goal is to have a quarterly newsletter in which we will share success stories, great recipes, tips, info on upcoming classes, and more.

Do you have a success story to share?   Your story of success can help inspire others, as it is for certain, that there is someone else out there right now that that has experienced what you had……….and is in need of support, encouragement and inspiration.  Your story may be just what another person needs to hear right this very minute.  See below in our newsletter – we would love for you to share your success and/or any favorite GAPS recipes with us.

I have plans to create some advanced gut-health classes in the coming new year.   We will share them in the next newsletter.

Wishing you a happy, peaceful, and love filled holiday season.

With gratitude that I can be with you on your journey to wellness,

Laura Villanti

NOURISHING NIBBLES

Marinated Chicken Wings

Makes 25 to 30 wings

PREPARATION INSTRUCTIONS

• 1/4 cup honey (optional)
• 2 tablespoons apple cider vinegar
• 1/4 cup coconut aminos
• 1 onion, finely chopped
• 1 tablespoon ghee, schmaltz (chicken fat), lard, or butter, melted
• 1 red chile or jalapeño, diced (remove seeds, optional)
• 1-2 inches gingerroot, grated
• 2 cloves garlic, minced
• Pinch of cayenne (optional)
• 25-30 chicken wings and/or drumsticks
• 1/2 teaspoon sea salt
• 2 tablespoons sesame seeds
• Chopped scallions, for garnish
In a medium saucepan over medium-low heat, gently melt together the honey, apple cider vinegar, and coconut aminos until incorporated. Add the remaining ingredients (except the chicken, salt, sesame seeds, and scallions) and stir. Place the chicken in a giant glass or porcelain baking dish. Pour the marinade over it, making sure all the wings are covered. Massage the marinade into the wings, cover, and place in the fridge for at least 2 hours (preferably overnight, tossing two or three times).
Preheat the oven to 425°F. Spread the chicken wings on a large pan and sprinkle with salt. Bake for 25 to 30 minutes, until cooked through and nicely browned on the top. Sprinkle with sesame seeds and chopped scallions and serve. If you are worried about spices, you can omit the chile and cayenne.
Note: In a pinch I have popped the wings on a sheet pan, drizzled them with coconut aminos, chopped garlic, and ginger, added a few pinches of salt and pepper, tossed, and then popped them in the oven. Upon removing, I sprinkle with sesame seeds and serve! If you don’t have time for marinating, don’t sweat it!

Lemon Curd

Serves 4 to 6

After making macaroons, this is a great way to use up the leftover egg yolks! This is surely a crowd pleaser!

PREPARATION INSTRUCTIONS

• 6 egg yolks
• Juice and zest of 3 lemons
• 1/4 cup of honey
• 1/4 cup ghee or butter, chilled (Full GAPS)
• Pinch of sea salt
Using a double boiler, whisk together the egg yolks, lemon juice, lemon zest, and honey, combining thoroughly. Slowly whisk in small pieces of the ghee or butter (if you’re using it) until it’s all incorporated. Gently simmer, and occasionally whisk the mixture until it thickens, 5 to 10 minutes. Once you have reached the desired custard-like consistency, remove the curd from the heat and place it in a bowl of ice-cold water to halt the cooking process. Pour it into a glass dish or single-serving ramekins, and store in the fridge. Yum!

A STORY OF SUCCESS

We LOVE to share testimonials as we know that they are inspiring to EVERYONE.  Here is a note we recently received from a client:

Good news!  (my 3 month update after following GAPS)

- My anxiety and OCD are MINIMAL. I can't tell you what a relief this is to have my mind back. I can tell you a hundred different ways this has improved my life: I am not occupied for days when I hear depressing news or constantly making up worst-case scenarios to dwell on; I have established a "normal" level of clean in my home instead of a freakishly orderly one, leaving me more time for friends, volunteering, reading, exercising, enjoying life; my relationship with my husband is at an all-time high.

- I can breathe better! My lungs feel huge and clear, like they take up my whole torso. It feels amazing, and even more amazing is that I never EVER would have reported having a breathing problem before now.

- Previous symptoms of PMS (cramps, hot flashes, lightheadedness, mood swings) were non-existent last month for the first time.

- I have lost weight in some difficult areas (belly, sides) and gained muscle.

- My thumbnails have grown out and have none of the deep groves in them. They are completely smooth now.

- I have greatly reduced cravings for alcohol, which used to occur nightly. I am down to drinking wine at most, one night a week. Herbal teas are now the nighttime norm.
