Ground Beef and Zucchini
This recipe from John at Windy N Ranch is a great way to utilize summer zucchini and flavorful beef from the ranch!
1 lb ground beef
3 minced garlic cloves
1/4 cup minced yellow onion
Oregano to taste
2 Medium size zucchinis, cut into small sized cubes
2 tablespoons of olive oil
In a deep frying pan add and heat the olive oil, add the minced onion and cook on medium heat until transparent. Add the garlic and oregano, let the garlic cook for a couple of minutes and then add the ground beef, salt, and pepper. Cover the pan.
Let the meat cook until there is no more pink, adjust the flavors and add the zucchini. Cover the pan again and let the zucchini cook for a couple of minutes. Don't overcook it, you don't want the zucchini to be mushy.
