Traveling as a WFPB Eater

Linda Jone's expert presentation, Making Your Own Plant-Based Cheese, is on our YouTube channel. Here are her accompanying Cheese Recipes.
At April's South meeting, Naomi Herman led a discussion about WFPB snacks, including:
>  Steamed baby potatoes, dipped in mustard
>  Veggies (raw or steamed) with hummus
>  Dehydrated carrots from Whole Foods
>  Homemade cashew butter
>  Rice crackers, rice cakes
& matzah

>
Walnut Date Balls:
      2 c. dates
      2 c. walnuts
      1 c. shredded unsweetened coconut
      1 tsp.vanilla
Mix all ingredients in food processor, then form balls. Refrigerate.

Giant Eagle supermarkets - with stores in PA, OH, WV, MD & IN - started sponsoring monthly WFPB cooking videos! Here's the link for baked Corn Zucchini Fritters. (I made a double batch--easy, delicious and freeze well!)
Also, check out Lulu Herold's Four Ingredient Blueberry Cookies recipe. ;>)

Also in April, Marsha Wong & I attended AHN's Eat Smart, Train Smart event. We gave information about the power of plant-centered eating for athletes & trainers, plus offered samples of Lulu Herold's simple & yummy Non-Dairy Pimento Cheese:
-  1 can white beans, drained/rinsed
-  4 T. almond butter
-  2 large pieces roasted red pepper, rinsed
-  3 T. miso
-  2 cloves garlic
Add ingredients in blender
& blend until smooth.
