MEETING TOPICS

BRING-A-COOKBOOK EVENT!
At the February 29 meeting, come with one or more cookbooks to share with others. Bring a pen & recipe cards or your phone to take photos of interesting recipes. (Or, you can make copies at the library for 15 cents.)
And, as always, we will discuss whatever else is on your mind!

At last month's meeting, we tasted samples of cacao bits, along with 90%, 85%, & 75% cacao chocolate. And, we shared recipes for healthy plant-based desserts. Here's a recipe to add to that list:
  • 2 c. canned black beans, drained
  • 1 1/4 c. pitted dates
  • 2 tbsp. almond butter
  • 1 tsp. pure vanilla extract
  • 1/2 c. cacao or cocoa powder
  • 1 tbsp. ground chia seeds
Preheat oven to 200 degrees F. Combine beans, dates, almond butter, & vanilla in food processor or high-powered blender; blend until smooth. Add remaining ingredients & blend. Pour into prepared 8x8" pan. Bake 90 min. Cool completely. Cut into 16 squares.
Also at the January meeting, we talked about Indian foods. Here are six delicious-sounding recipes from Forks Over Knives website -- enjoy!

Have you heard of the Tomato Effect? It is when the medical establishment rejects sound science, such as when tomatoes were considered poisonous and were shunned for centuries in North America, despite overwhelming evidence to the contrary. Has the influence of money created a tomato effect in regards to our current nutrition policy & practice? Here's Dr. Greger's article.
