2) Plant-based Substitutions -- a discussion in preparation for the upcoming holidays. When cooking or baking, what are your substitutes for 
  • Meat?
  • Oil?
  • Dairy?
  • Eggs
Also, what do you substitute if you or family members have allergies to certain foods? I'll bring a handout; you bring your ideas and questions!


Topic: SOUP, glorious SOUP!!
We'll have soup tastings and share recipes. Here are recipes to get you started:

From East End Food Co-op
From Forks Over Knives
Chickpea Noodle Soup  (a favorite of mine) 
  1 carrot 

  2 stalks celery 
  1 small onion 
  10 cremini mushrooms 
  8 cups low-sodium vegetable stock 
  1 tsp tahini
  1 tsp tamari 
  ½ tsp turmeric
  dried oregano/basil + sea salt/dulce + black pepper
  4 oz. whole wheat pasta 
  1 15-oz. can chickpeas
1. Line large pot with broth, about ¼ cup.
2. Add carrots, celery, onion; sauté 'til onions are translucent, about 3 min.
3. Add mushrooms. Cook 'til soft, about 3 min.
4. Add broth, spices, turmeric, tahini, tamari.
5. Cover; bring to a boil.
6. Add pasta; reduce heat.
7. Cook 6 min. or 'til pasta is al dente.
8. Stir in chickpeas.
