At our November meeting, we discussed ways to substitute ingredients and adapt recipes to make dishes healthy yet tasty. As a follow-up to questions and issues that arose, I am providing the below information.
4) Plant-based milk: Below is the link to Lindsay Nixon's blog describing types of non-dairy milks. She outlines what to look for when buying milk products, as well as information about carrageenan & GMO's.
As Lindsay says,find a plant-based milk you like and use it!
Sue shared this Protective Diet recipe for "The Best Vegan PD Chocolate Chip Cookies." YUMMY!!1/2 c. unsweetened applesauce
1 c. mashed/pureed banana
1/2 c. soy milk 1 tblsp. vanilla extract
2 c. oat flour 1 tsp. bkg. soda
1 tsp. bkg. powder 1/4 c. cacao nibsMix dry ingredients, then combine with wet ingredients. Add cacao nibs. Make rounded tblsp. balls; place on bkg. sheet lined with parchment paper. Bake 7 min., then use fork to mash top in 'X' pattern. Bake 1-2 min. more.
