In keeping with National Soup Month, a recipe from our cookbook:
HUMMUS SOUP
(by Linda Jones, adapted from Dr. Fuhrman)
Ingredients: • 1 med. onion, diced • 3 garlic cloves, minced • 4 c. veggie broth • 1 med. cauliflower, broken into florets • 1 can chickpeas, drained • ¼ c. tahini • juice of 1 lemon • 1 T. tamari
Directions: 1. Water sauté onion & garlic 'til soft. 2. Add 4 c. broth; bring to boil. Add cauliflower; simmer 10-15 min. 3. Transfer to blender, add other ingredients. Blend 'til smooth.
