Brittany Jaroudi of The Jaroudi Family (with almost 43,000 subscribers!) will be in her kitchen sharing tips for making summer grilling easy.

Potato Salad: Combine boiled/diced red & gold potatoes, celery, green onions, peas, + dill with this Tofu Mayonnaise:
1 12.3 oz package firm silken tofu
1 Tbsp rice or apple cider vinegar
2 tsp Dijon mustard
¾ tsp garlic powder
¾ tsp onion powder
¾ tsp sea salt
½ tsp coconut or date sugar
In blender, process ingredients until smooth. Best if chilled at least an hour before serving.

Plant-Based Pittsburgh members: let's get into "good. necessary trouble" with the truth about the power of plant-centered eating: for our health, our animals' health, and health of our planet. Looking for some "good trouble"? Here are suggestions:
I. On July 21, Plant-Based Pittsburgh joined PlantPure Communities to send a letter to Governor Wolf urging him to implement a data-driven nutrition strategy to fight COVID-19. Various news outlets in Western PA received this press release. You can ...
- Share the letter and press release with friends, family & on social media.
- Share Dr. Greger's video How to Prevent the Next Pandemic re. the need to reform our food system before it’s too late.
- Invite friends & neighbors to our monthly Zoom presentations.
- Write a letter to your community newspaper.
- Contact community leaders (mayor, councilperson, health administrators, legislator) about how nutrition can protect against the worst of COVID and help to reopen our economy.
II. ReImagine Appalachia is a coalition of organizations (mainly environmental) from four states with the goal of creating equitable and sustainable jobs throughout the region (see Pgh. Post-Gazette article). Many environmental groups have yet to embrace the "inconvenient truth" about food-climate connection; this coalition was no exception. I worked to include plant-based foods as a crucial element of sustainability, regeneration & job growth in the coalition's Blueprint. Despite considerable push-back, the final Blueprint includes the word "plant-based" (p. 7)!! Note that Plant-Based Pittsburgh is an endorser (p. 8). You can ...
- Speak up about the critical relationship between food & environment, especially during this time of COVID and greater social/economic needs.
- Connect with Reimagine Appalachia on facebook and their newsletter. Advocate for education & policies supporting healthful plant-based foods for residents of the Ohio Valley.
- Join ReImagine Turtle Creek Watershed & Airshed Communities working on sustainable economic development for Southwest PA. Want to join me on the Health & Wellness sub-group?
- Engage with other environmental organizations. Add your voice about shifting toward plant-based foods to mitigate climate change.
- Join Sailesh Rao, of Climate Healers, for a presentation for Southwest PA: Healing Humanity; Healing Earth on Sun. 8/16, 4-6 pm. Dr. Rao will talk about a new food system where healthy, immune-boosting, whole plant-based vegan foods are freely accessible to every human being.
