The Power of Plant-Based Eating

Wed., JULY 29, 8-9 pm. (note later time!) Sally Lipsky will present information about the relationship between food cancer and why plant-based eating is so important for preventing & fighting cancer. Includes an overview of what plant-based eating is, 3 steps for easy meal prep, sample shopping lists, & helpful resources.

Many thanks to our June presenters! Phil Ciarelli's presentation, Gardening A-Z, was comprehensive & useful, even for a novice gardener. I've put several of his suggestions into practice. Brittany Jaroudi demonstrated two luscious summer desserts: Lemon Bars & Key Lime Pie. Both presentations are on our YouTube channel

  • Brussels Sprouts/Spinach/Pecan Salad with Bourbon Balsamic Dressing

  • Vegan Patty Melt Burger 
Linda Jones made this beautiful salad (quinoa, craisins, mango, pistachios, green onion, & parsley) with this Walnut Vinaigrette Dressing
* 2 T. red wine vinegar
* 2 T. fresh lemon juice
* 1/2 c. water

* 1/4 c. walnuts
* 1/4 c. dates
* 1 tsp. Dijon mustard

* black pepper to taste

Blend ingredients together.
I made this potato salad (boiled/diced gold potatoes, red onions, cherry tomatoes, shredded carrots, diced kale, fresh dill) with Brittany Jaroudi's Easy Creamy Dressing:
* 1/2 c. hummus
* 1 T. Dijon mustard
 *1 T. balsamic vinegar
Mix and serve!

Many thanks to those of you who donated to our food drive benefiting Wilkinsburg Community Ministry Emergency Food Pantry. We filled the back of 3 cars with donations of grains, beans, fruits, veggies, & condiments. Plus, we received monetary donations of $150. On June 24, we gave pantry patrons samples of black bean brownie bites, dip & chips, and a bag with salsa, black beans, & BLACK BEAN RECIPES.
Sun., July 12, 7-9 pm. Dr. Michael Klaper is leading a 12-week online, live class geared toward medical students, health professionals, health advocates & 'regular' folks wanting to learn more about applied nutrition. Info. & registration.
Pittsburgh pediatrician Keith Somers collaborated with Sharda Ten Hove on a Plant-Rich cookbook. Here's a free download of a mini cookbook with kid-friendly recipes, tips, & beautiful photos.
Plant Based Data contains over 1000 peer-reviewed articles, organized into reference lists and cataloged by topics. A wonderful resource!
