Linda Jones made this beautiful salad (quinoa, craisins, mango, pistachios, green onion, & parsley) with this Walnut Vinaigrette Dressing:
* 2 T. red wine vinegar
* 2 T. fresh lemon juice
* 1/2 c. water
* 1/4 c. walnuts
* 1/4 c. dates
* 1 tsp. Dijon mustard
* black pepper to taste
Blend ingredients together.

I made this potato salad (boiled/diced gold potatoes, red onions, cherry tomatoes, shredded carrots, diced kale, fresh dill) with Brittany Jaroudi's Easy Creamy Dressing:
* 1/2 c. hummus
* 1 T. Dijon mustard
*1 T. balsamic vinegar
Mix and serve!

Many thanks to those of you who donated to our food drive benefiting Wilkinsburg Community Ministry Emergency Food Pantry. We filled the back of 3 cars with donations of grains, beans, fruits, veggies, & condiments. Plus, we received monetary donations of $150. On June 24, we gave pantry patrons samples of black bean brownie bites, dip & chips, and a bag with salsa, black beans, & BLACK BEAN RECIPES.
