Kylie Lichtenstein made this colorful salsa; she chopped all ingredients with the smallest setting of a veggie chopper. Kylie suggests eating the salsa with baked chips, on potatoes, in wraps (add hummus/lettuce), to “dress up” a salad, or with a whole grain.
Easy & Versatile Salsa
2 sweet peppers, chopped
1 red onion, chopped 
2 cups corn kernels
2 cucumbers, chopped
2 tbsp vinegar 
1-2 tsp chili powder
Pinch of salt
Pepper, to taste
Any other seasoning, to taste
