PLANT-BASED NUTRITION SUPPORT GROUP

Next meeting:

Open to anyone interested in learning & sharing information about healthy, plant-based food choices.

 

Meeting Agenda

  1. SHARING RECIPES: What dishes have you prepared using fresh, in-season vegetables and fruits? Bring a recipe to share (even if you haven't tried it, but it looks good!) I will bring blank recipe cards, but you also can take phone photos of each others' recipes or use the library's copy machine (I think it is 15 cents).
  2. Q & A: Please bring your questions, news items, and any other relevant information!


Has anyone cooked with the grain Amaranth? We discussed this grain in a recent class; here is a recipe I got from yogalean:

Amaranth Fruit & Nut Cereal

  • 1 C. amaranth
  • 2 C. water or plant-based milk
  • 1/2 C. almond milk
  • 1 Tbsp. vanilla, almond, maple, or cinnamon flavoring
  1. Combine the ingredients in a pot.
  2. Bring to boil, then reduce heat to simmer, stirring occasionally.
  3. When liquid is almost absorbed, add fruit & nuts, as you like.
  4. Stir until the liquid is absorbed.
