Giving Tuesday is a global day of giving that harnesses the collective power of individuals, communities and organizations to encourage philanthropy and to celebrate generosity worldwide.

Following Thanksgiving and the widely recognized shopping events Black Friday and Cyber Monday, this year’s #GivingTuesday will take place on November 27th and will kick off the giving season by inspiring people to collaborate and give back.

Squash overload?

Remember how you welcomed the first winter squash of the season? After a few weeks of making soups, salads, breads, cakes... you name it, you are probably running out of ideas, aren't you?
Worry no more! Before you put it in storage, fall in squash love again with this versatile recipe!
Pasta with Winter Squash Sauce
Inspired by cookieandkate.com

Ingredients:
  • Winter Squash -- 2 lb or 3 cups, peeled, seeded, and cut into small ½-inch pieces
  • Onion -- 1 medium or half large, chopped
  • Garlic -- 2 cloves, chopped
  • Pasta -- 12 oz of any kind
  • Sage -- 1 tbsp, fresh, chopped
  • Olive Oil -- 2 tbsp
  • Vegetable Broth -- 2 cups
  • Pepper Flakes -- 1 pinch or to taste
  • Salt & Pepper to taste
* Optional garnishing items: Parmesan cheese, bacon, fried or poached eggs, frozen green peas, baby spinach... your imagination is the limit!
Directions:

Crisp sage in hot oil, set aside and sprinkle some salt.
Add squash, onion, and red pepper flakes to the pan and season with salt and pepper. Cook, stirring occasionally, until the onion is translucent. Add the garlic and cook for a few seconds until fragrant.
Add the broth, bring mixture to a boil, then simmer until squash is soft and  liquid is reduced by half (15 to 20 minutes). Let it cool slightly.
Cook pasta until al dente, and reserve 1 cup of the pasta cooking water before draining.
Puree sauce in blender, correct seasoning and mix it with cooked pasta in skillet, adding reserved water if necessary.
Serve topped with fried sage, black pepper and more*!
