Spring Recipe

Artichoke and Arugula Pizza with Prosciutto

Ingredients

Cooking spray
1 tablespoon cornmeal
1 (13.8-ounce) can refrigerated pizza crust dough
2 tablespoons commercial pesto
1/2 cup (2 ounces) shredded part-skim mozzarella cheese
1 (9-ounce) package frozen artichoke hearts, thawed and drained
1 ounce thinly sliced prosciutto
2 tablespoons shredded Parmesan cheese
1 1/2 cups arugula leaves
1 1/2 tablespoons fresh lemon juice

Preparation

Position oven rack to lowest setting. Preheat oven to 500°

Coat a baking sheet with cooking spray; sprinkle with cornmeal. Unroll dough onto prepared baking sheet, and pat into a 14 x 10-inch rectangle. Spread the pesto evenly over dough, leaving a 1/2-inch border. Sprinkle mozzarella cheese over pesto. Place baking sheet on the bottom oven rack; bake at 500° for 5 minutes. Remove pizza from oven.

Coarsely chop artichokes. Arrange artichokes on pizza; top with sliced prosciutto. Sprinkle with Parmesan. Return pizza to the bottom oven rack; bake an additional 6 minutes or until crust is browned.

Place arugula in a bowl. Drizzle juice over arugula; toss gently. Top the pizza with arugula mixture. Cut the pizza into 4 (7 x 5-inch) rectangles; cut each rectangle diagonally into 2 wedges.

Shout Out to the Athletic Feat 5K Training Group!

The 2016 AF Training Group was a huge success! We are proud of our runners' hard work and dedication. Progression training takes patience but the results are great: healthy runners who can run 5K continuously! We also saw big Personal Records (PRs) in the mile, which we run at the beginning of our training and then revisit 8 weeks later to measure improvement in fitness. Hats off to you!

Got Plantar Fasciitis?

Sharp pain in the heel when you get out of bed? Constant nagging discomfort in your heel or arch during and after prolonged activity or standing? You may have Planter Fasciitis. The pain is caused by an inflammation or straining of the Plantar Fascia, the connective band of tissue that runs from your heel up to your toes. The pain can most commonly be caused by excessive pronation (the inward rolling of the foot), extended exercise or standing on hard surfaces, being overweight, having tight calves and achilles, or wearing unsupportive footwear.

Here is our list of helpful tools for alleviating your Plantar Fasciitis:

Stretch and Roll: Try gentle calf stretches with your foot up against the wall and your leg straight. Massage your calves by using a foam roller or massage stick.
Ice: Roll the arches on a frozen water bottle to ice and massage at the same time. Or try the Moji Foot Pro (seen below)
Support your Arches: Try an insert that offers support such as Superfeet or Spenco. Sandal and slippers with support will help keep the plantar fascia from being irritated. Don't Go Barefoot!
Strengthening Exercises: Place a hand towel on the ground in front of a chair. While seated, try to pull the towel towards you only using your toes (keep your heels planted on the floor). The scrunching action engages the arch and can help strengthen the weakened area.
