On Tuesday, October 1st, the University of Nebraska-Lincoln Dairy Store held a gathering to unveil its newly renovated space and location. Dairy Store Ice cream was served along with other treats, fruit, and cheese. Dr. Curt Weller, Department Head, took the opportunity to honor retiring faculty members, Dr. Steve Taylor and Dr. Vicki Schlegel. A long-time Dairy Store employee, Kathy Vokoun, was recognized for 30 years of service. Several notable people were in attendance including, former Department Head Dr. Ted Hartung, Senior Associate Vice Chancellor Ron Yoder, and Dean Archie Clutter. The Dairy Store is now open for business in its new location.
The research of Dr. Amanda Ramer-Tait, her lab, and colleagues was featured in the September 26th, Nebraska Today. The research shows that foreign gut bacteria can substantially slow the growth of young house mice, suggesting that the species' evolution was partly steered by its own bacteria.  You can read the full article at

In commemoration of the University of Nebraska’s 150th birthday, the Nebraska Grain Sorghum Board (NGSB) and the UNL Dairy Store will unveil a new ice cream flavor at the Cornstock Festival on Friday, October 4. The unveiling of the new flavor, ‘Sorghum Army’s Double Chocolate Chip Cookie Dough Invasion’ will take place in the Memorial Stadium Loop at 4:45pm.

‘Sorghum Army’s Double Chocolate Chip Cookie Dough Invasion’ will only be available at the UNL Dairy Store located at the University of Nebraska Lincoln’s East Campus. It will be one of over 100 flavor options in rotation.

Dr. Roy Arnold, former professor of Food Science & Technology at UNL and Department Head and Vice-Chancellor of IANR passed away in Oregon on September 22, 2019. Roy spent the first 20 years of his career at the University of Nebraska in Lincoln, eventually serving as the Vice-Chancellor for the Institute of Agriculture and Natural Resources. In 1987, he returned to Oregon State University, first as the dean of the College of Agricultural Sciences and then as Provost & Executive Vice President from 1991-2000. After retiring in 2006, he continued to mentor young faculty and work with the Kellogg Foundation.

Working with mice in sterile environments; preparing the food, water, and bedding for the mice and maintaining the sterile conditions of the isolators using aseptic techniques. Assistant Professor

The appointee will be responsible for teaching undergraduate and graduate coursework, with a typical teaching load of two to three courses per year encompassing courses focused on food chemistry (e.g., FST100A, Food Chemistry; FST100C, Physical Chemistry of Foods; FST101A, Food Chemistry Laboratory and FST202, Chemical and Physical Changes in Food.). Additional contributions to departmental courses and graduate education in Food Science and Technology are expected, with opportunities for participation in the graduate groups of Food Science, Viticulture and Enology, Agricultural & Environmental Chemistry and others.

Job Requirements:

Laboratory Scientist I

The Nebraska Department of Agriculture Food, Dairy & Residue Laboratory performs a wide range of microbiology and chemistry tests. This position is split half-and-half between dairy and food testing. Test results support regulatory programs in the NDA Food Safety and Consumer Protection focus area to protect public health and to prevent consumer fraud. Labwork adheres to ISO 17025 and the Pasteurized Milk Ordinance to ensure the quality and mutual recognition of test results.
