Do not wait for inspiration - create it yourself!  


Everyday we wake up in the morning and need to deal with the responsibilities of the day. If we don't feel like going to work or school, or dealing with domestic family necessities, we don't have a choice. Disastrous consequences can result if we don’t fulfil our responsibilities, so we do what is necessary.

Quite often, we lose our precious inspiration under the pressure of our day-to-day life. And without inspiration our life becomes very grey.

So, instead of waiting for inspiration to come to us, we can create it ourselves to get back on track with enthusiasm, dynamism, new ideas and life-energy.

Just think of the things that inspired us before:
- Nature
- Good book
- Good company
- Achieving goals (large and small)
- Spiritual experiences

We can also start finding inspiration by changing our attitude toward seeing the positive aspects of our life responsibilities, and feeling grateful regarding our life situation and the necessary obligations inherent therein. Also the silence of meditation can definitely help everyone. It’s interesting, but peace and silence seem to cultivate very fertile soil for developing most of the qualities that we badly need in our lives and putting things in proper perspective. Dedicate a little time for solitude and personal devotional practises. You will be surprised, how rich theses moments however brief can be.

2 poached free-range eggs with sautéed kale, tomatoes and grilled soy ham on a whole wheat English muffin topped with our home-made hollandaise sauce and served with our European-style potatoes.  Scrumptious!!!

Grilled vegetarian ham, sharp cheddar cheese and grilled granny smith apple served on multigrain bread. This combo is really amazing.

Try our Mexican style black beans and organic brown basmati rice (cooked with grilled onions, green peppers, fresh garlic and a touch of salsa).  It is served with our house salad or sautéed veggies.  This dish is very delicious, satisfying and healthy.

An amazing three bean rich vegetable chili with zucchini, carrots, corn, broccoli, summer squash & a secret ingredient: a touch of dark chocolate! It is served with a hefty Johnnie Cake. Scrumptious, filling and healthy!

Healthy Dietary Tips

A good source of complex carbohydrates, fiber, and thiamin, corn is an excellent low-fat food that provides abundant energy and may help to fight heart disease, certain cancers macular degeneration, and obesity.

What’s in it

Folate. This B vitamin has been found to prevent neuratube defects in fetuses, and current research suggests that It also helps to reduce the risk for heart disease and cancer. (One cup of corn kernels has 51 mg of folate, or 13% of the Daily Value.) 

Lutein and zeaxanthin. Lutein and zeaxanthln are  tenoids that may help to prevent certain eye conditions such as age related macular degeneration, one of the leading causes of blindness in older adults. Corn is especially high in lutein (1 cup has 3mg)

Protease inhibitors. These compounds may help to fight cancerous tumors by stopping the division of proteins that signal uncontrolled cell growth (tumorigenesis).

Soluble fiber. This type of fiber may help to lower cholesterol by binding with it and blocking its absorption. And if you are trying to lose weight, it is always helpful to consume high-fiber foods because they increase bulk and make you feel full sooner and for longer.

Thiamin. This B vitamin is required by the body for converting food to energy; a thiamin deficiency can result in fatigue. Thiamin is also essential for proper functioning of the nervous system.

Add more to your diet

⁃    Boost both the flavor and the health benefits of your next batch of cornbread by adding corn kernels to the batter.
⁃    Season corn-on-the-cob with lime juice instead of butter.
⁃    Combine corn kernels with chopped scallions, red bell pepper, hot pepper sauce, and lime juice, and use as a quick salsa.
⁃    Serve an Italian-style polenta (made from cornmeal) as a side dish in place of rice or pasta.
⁃    Add cornmeal to pancake batters, tea breads, and biscuits.
⁃    For an interesting take on the Spanish soup gazpacho, substitute corn kernels for the cucumbers that most recipes call for, and stir in a generous amount of chopped cilantro.

Maximizing the benefits

To preserve the water-soluble B vitamins in corn (folate and thiamin), it's best to steam rather than boil it. If this isn't practical (since most people cook corn on-the-cob by the dozen), then be sure to cook for no longer than 10 minutes in boiling water to minimize nutrient loss.

Health bites

A study conducted by researchers at Harvard showed that women with the highest intake of lutein (and its companion carotenoid, zeaxanthin) 22% reduced risk for cataracts, while men reduced risk by 19%.
