The Hot Thymes of July
The temps are up and we're working hard with a full summer of events! Summer is our busiest time of year but we try to balance out the work with some 'cool down' time with family and friends. Take a look at what we're working on this month and we hope you're enjoying vacations, pool time and BBQs this month!

July 28 - First wine dinner held at Venue32
Judd Wallenbrock from Humanitas Wines in California will be hosting the evening to take you through a variety of pairings from our own Chef Andrew Darrigan. Judd started Humanitas Wines in 1997 with the goal of not only making exceptional wines, but doing good for humanity! Humanitas Wine sales benefit many charities to help out the less fortunate. Proceeds from this evening will go to one of our favorite local non-profits, CASA of the Pikes Peak Region. Call us at 719-632-5414 for your reservation!

People in our Thymes

For this week's People in our Thymes, we'd like to feature one of our preferred vendors for Venue32. Laser Sound, Professional DJ Service.

Daniel Osinski is the owner and main DJ at Laser sound. He's been a DJ for almost 30 years. It all started in his Jr. High School years where he began as a DJ for a local teen night club. 'I was a music NUT. I played a couple of instruments and just found myself listening to music all of the time. I could get into so many types of music from Classical to Top 40 to Jazz to Euro Trance Techno.'

'I grew up in Wisconsin and moved to Colorado in 2002. I wouldn't think of living anywhere else'
When Dan isn't working, he spends his time with his wife and 4 children enjoying Colorado, and doing many types of projects. Dan also enjoys a lot of volunteering. He serves on the EDC for the City of Fountain, Wine Festival committee entertainment chair, Ambassador for the RBA of Colorado Springs, Board Chair for the Mid Market Entrepreneurs and other organizations.

July is full of BBQs and just wanting to get out of the kitchen and get cooking on the gril. We love to grill up salmon in the summer and enjoy this recipe from Natasha's Kitchen.

Grilled Salmon Skewers with Garlic & Dijon
 - 8 skewers

Salmon Lemon Kebobs:
1.5 lbs salmon fillets, cut into 1-inch squares
2 large lemons thinly sliced
16 (10-inch) bamboo skewers

Marinade:
2 Tbsp parsley, freshly chopped
2 large or 3 small garlic cloves, pressed
1/2 Tbsp Dijon mustard (we used grey poupon)
1/2 tsp salt
1/8 tsp ground black pepper
2 Tbsp light olive oil (not extra virgin, pick something with a higher smoke point)
2 Tbsp of fresh lemon juice from 1/2 large lemon or 1 small lemon
  1. Prep: Soak bamboo skewers at least 1 hour to keep them from catching fire. Preheat Grill to medium heat (about 375˚F).
  2. In a medium bowl, stir together all of the marinade ingredients: 2 Tbsp chopped parsley, 2 pressed garlic cloves, ½ Tbsp dijon, ½ tsp salt, ⅛ tsp pepper, 2 Tbsp olive oil, 2 Tbsp lemon juice.
  3. Double skewer the salmon and lemon slices folded in half intermittently onto two skewers at a time (The double skewer aids in turning the salmon kebobs on the grill). Brush both sides of skewered salmon with marinade.
  4. Oil the grates then carefully place salmon skewers onto the hot BBQ. Grill kebobs for 3-4 minutes per side or until salmon is cooked through and opaque.
