Love Roast Turkey?
We still have space for more guests on this Thursday for Thanksgiving (book here for dinner as well as transfer from/to town if you need). But our Thanksgiving Reprise on Saturday is SOLD OUT unless you are able to find a hotel room available for the night of 25 November through a cancellation on our online booking site.

Holiday Partner’s Table
We’ll have a fireside dinner hosted by our partner Liang Tang on Saturday 9 December. The menu will be a festive surprise created by executive chef Randhir Singh. The last special dinner on 4 November featured Chinese seasonal fresh crab prepared three ways: hot bisque, warm cakes, and cold salad. Team Spotlight: Song Cuihong
Song Cuihong started at The Schoolhouse in May 2008 as a dishwasher and is today a senior sous chef managing the back of the house at the Brickyard. She says, “With no previous professional western kitchen training I started working in the cold kitchen, learning homemade pasta, and then three years learning in hot kitchen, salad-making, and desserts. I am from this village of Beigou and I am very proud of my work, which has not only changed my life but also my values.”

Heads Up: Gregory Burns Act II

Cooking with Randhir
In late Autumn out here in the mountains north of Beijing the last leaves fall and golden persimmon globes sparkle against bare branches and deep blue sky. How to use this last bounty of the year? Our old friend Walter Stryker gave us a traditional American recipe for persimmon pudding and we’ve been making it since our first Thanksgiving season in 2006. Try it at home if you can find this fruit in a store or a fruit vendor’s stall.
Sustainability in Action
The cabbage came in and now we have finished the growing season in our Brickyard kitchen garden. The next “crop” will be 188,000 firecrackers strung in the garden to set off at midnight on Chinese New Year’s, coming up in mid-February. Join us for Chinese New Year’s Eve?
