INTERNATIONAL UPDATE A MESSAGE FROM SLOW FOOD PRESIDENT CARLO PETRINI
Slow Food’s headquarters in Northern Italy has now gone into complete lockdown. Slow Food are continuing to support small-scale sustainable food producers by encouraging all citizens to choose good, clean and fair food above all else. More than ever before, Slow Food believes in the importance of solidarity and supporting our local communities.
Slow Food President, Carlo Petrini offered words of hope and encouragement not only for Italians but to the rest of the world in this video message.
'We have been given the opportunity to make a paradigm shift, to recreate a system that gives more space to territories and communities.'
'I foresee the issues of sustainability and food sovereignty topping the agenda as we can no longer think that food is produced by one company for all. We have stolen space from the countryside, we must regain it to kick start a primary economy at the service of the local communities.'

is all about using every last inch of food that they grow on their farm in Wolvi near Gympie. This old fashioned pickled cucumber recipe is a great way to use up any vegetables that might otherwise get thrown out.Cooloola Berries
1. Sterilise jars by heating in a warm oven.
2, Wash veggies of choice - cucumbers, baby onions, garlic & zucchini work well.
3. Prepare vinegar & spices of your choice (fennel seeds, dill, mustard seeds, whole peppercorns go well together). You can add a little sugar if you like your veggies a tad sweeter than sour.
2. Spoon into jars & prererve in a dark cupboard for around 2-3 weeks.
3. Add to salads and sandwiches.
