RUTH HIDALGO!

Today, I would like to take the time to introduce you to the newest member on our team, Ruth Hidalgo. Many of you have met Ruth, since she started here at Herbs4You. She is a home herbalist and a natural health enthusiast, and we are honored to have her on our team.

Ruth was first introduced to natural healing through the book, Back to Eden, by Jethro Kloss, 23 years ago. Since then, she has learned from many books and health and healing modes, and has gained a wide range of knowledge. Ruth has been using herbs medicinally for 21 years, and s has 18 years experience with home-birth. 

Ruth has been a guest on conference calls on natural health, and Katherine Wadell once interviewed her about home-birth and natural childbirth experiences. She has studied under Traditional Naturopath, Patrick Hatwan, for several years, and also hosts a blog entitled “Ruth’s Remedies”.

Over the years, Ruth has experienced many victories using natural methods of healing with family and friends. One story she loves to tell is how her husband was healed of gout. Once crippled and on crutches, he now is pain free and able to walk without any assistance! Of course, it took a lot of research and diligence, and plain old work, but the results have been well worth it.

In 2015, Ruth completed her Bachelor’s degree in Applied Management from Grand Canyon University, and she hopes to apply this business knowledge while assisting at Herbs 4 You. She is very excited to be working with us, because of the philosophy we hold, which combines the natural and the spiritual, and gives a Biblical basis for the use of herbs. She believes the words of Revelation 22:2: "...The leaves of the trees were for the healing of the nations.”

Presently, Ruth is learning muscle-testing from Amy Willis and working towards her certification as an herbalist. Future plans include continuing to learn all she can about health and wellness

Healthy Tidbit: Ruth's Tabbouleh
The USDA recommends three 16 gram servings of whole grain foods every day. Eating just a single portion of this nutrient dense salad will give you all three recommended servings! A whole grain includes all the parts of the grain kernel. They are not just packed with fiber, they also have vitamins, minerals, and phytochemicals. It also may help reduce the risk of certain cancers and heart disease.

Tabbouleh is a middle eastern dish that my family enjoys! I hope you will enjoy it too!

Ingredients:
2 cups quick cooking bulgur (soaked for one hour)
1 cup parsley, finely chopped
3 green onions finely sliced
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 tsp. ground cumin
1 large green pepper or 4 small sweet peppers of your choice.
2 medium tomatoes, seeded and diced
1 medium cucumber peeled and sliced
Juice of one large lemon
One large head of romaine lettuce, washed with leaves separated and not torn
3 tbs. olive oil
  1. To presoak bulgur, place two cups bulgur in a bowl. Pour two cups water over bulger and let stand one hour.
  2. In a large bowl mix bulger and all other ingredients together, except the lemon juice, oil, cucumber slices, and romaine leaves.
  3. Add the lemon juice and chill for at least one hour to blend the flavors.
  4. Before serving, toss again with olive oil (and if you like, more lemon juice too!).
  5. To serve, set the romaine leaves in a circle (looks like sun rays) and put a mound of the salad in the middle. Scatter the cucumber slices over the romaine leaves. ENJOY!
Notes:
  • Traditional tabbouleh has a little fresh mint in it; about 1/4 cup. My family omits it, but you may want to try it.
  • Quinoa can be substituted for the bulgur for those on a gluten free diet.
