Dandelion
Today is Memorial Day, a great time to spend with family and give honor to those who have fought in our armed forces.
As we remember those who have given their lives for our country, let us not forget the One who gave His life for our soul. It is said that there is no greater love than giving one's life for another, but when God gave His Son for us, we were not even his friend. "But God commendeth his love towards us, in that while we were yet sinners, Christ died for us." (Romans 5:8)
This week, I want to speak on one of my favorite herbs, that we often think of as a weed.
Dandelion
The entire dandelion plant can be eaten and it is a very rich source of beta-carotene. It is also rich in vitamin C, potassium, iron, calcium, magnesioum, zinc, phosphorus, B vitamins, and trace minerals. Dandelion has been eaten for thousands of years. The green is a blood purifier and considered a “bitter herb”, and is high in nutritive salts. The roots have a sweet nutty taste and can be used in a variety of dishes. Roasted roots make excellent substitute for coffee.
Health Benefits
Historically, dandelion has been used to treat anemia, scurvy, kidney trouble, diabetes, dropsy, skin problems, blood disorders, and depression. As a digestive aid, dandelion acts as a mild laxative that promotes digestion, stimulates appetite, and balances the natural and beneficial bacteria in the intestines. Dandelion is a diuretic and helps the kidneys clear out waste, salt, and excess water. The bitter properties in the dandelion leaves are what stimulates the liver, and it has been shown to improve liver function by removing toxins and re-establishing hydration and electrolyte balance.
Dandelion is also rich in antioxidants which prevent free-radical damage to our cells and DNA. Some animal studies have shown that dandelion helps regulate blood sugar and insulin levels. As a diuretic, dandelion increases urination which then lowers blood pressure. The fiber and potassium in dandelion also helps to regulate blood pressure. Dandelion increases bile production and reduces inflammation to help with gallbladder problems and blockages. This wonderful herb also contains essential fatty acids and phytonutrients that reduce inflammation throughout the body. This can relieve pain and swelling.
