That picture was taken on 6th December last year in Devon. It was genuinely that warm on the beach - well almost!
A lot has happened since then, a really exciting year of teaching, observing my wonderful students practices unfold and expand, teaching regular pregnancy yoga classes each week, and feeling blessed to see the beautiful progress week by week! Growing & learning a lot about my own practice, and now also almost half way through my own pregnancy too............2015 is going to be exciting!

I have some tips for the festive season, recipes to share, gifts to buy, and an update on my classes for 2015.

I LOVE to cook. I spend a lot of my time reading recipes, blogs, websites for new inspiration and healthy options of things I love to eat :)
And I especially fancy something spicy and flavoursome during the festive season to break up the flavours of our British traditional Christmas meals.
I have 2 recipes to share this time, firstly a Thai noodle soup & my favourite Guacamole recipe.
You can of course make this without chicken, and use vegetable stock to make it a vegetarian dish.

Thai Chicken Noodle Soup:
Serves 2
1 ltr Chicken stock (proper stuff from boiled bones is best, or an organic stock cube)
1 Chicken breast sliced
Egg Noodles, or Rice Noodles
1 Lemongrass stick - bashed with a rolling pin
1 crushed garlic clove
Thumb size piece of peeled & sliced ginger
Broccoli cut small
Red Peppers thinly sliced
Bok Choi, or Choy Sum
Baby Corn
Sugar snap peas
Fresh Red Chilli
Soy sauce
1 fresh Lime

Heat the stock adding the lemongrass & ginger & garlic, bring to the boil, then reduce to a simmer for about 15 minutes.
Add the sliced chicken - cook for 5 minutes
Cook the noodles according to their packet in a separate saucepan
Add all the veg except the bean sprouts - cook for 5 more minutes
Serve the noodles into large bowls, add the soup on top, add a dash of soy sauce, and sprinkle on the
bean sprouts and garnish with fresh coriander & a squeeze of fresh lime :-)

My Favourite Guacamole!
Not sure if I made some of this recipe up, quite possibly! I usually do.

To make a bowl full (cereal bowl size)
2 Avocados
2 large Vine tomatoes
1 red onion
1 red chilli (regular or birds eye - your choice!)
1 fresh lime
Bunch of fresh coriander
1 garlic clove

Chop the red onion finely, add the crushed garlic & a handful of chopped coriander. Mix well. Chop the tomatoes finely, add them in with the avocados & the chillies and squeeze in the lime juice - give it all a good mash and a stir, then garnish with some more coriander.
Serve as a dip with carrots, or nachos, or add it to the top of your homemade chilli dish!

Stay a little healthy during the festive season if you can!
Some top tips:
Don't arrive anywhere hungry! You are more likely to eat too many snacks. Try and have a healthy option breakfast of porridge, or a smoothie to keep you going.
Drink plenty of water (to wash down the wine!) to keep you hydrated and also your body will know if you are actually hungry, or just thirsty.
Try and keep some healthy snacks in the house (amongst the chocolate!) so you have some healthy things if you are peckish.
You can always bust out a few sun salutations & yoga twists to alleviate a bit of sluggishness too! :-)
My January classes will be focusing on revitalising, energising, detoxing, and creating new intentions for the year ahead.
